Well its the begining of March and one of the only greens to make it through the winter was the winter spinach! Thats right all but one kale plant and a few cabbages made it through, barely! The winter spinach intercropped with spring onions on the other hand did quite nicely. The northerly wind break may have helped.
Now begins the joys of thinning this luxuriant lawn of sweet green. After a few minutes of picking choice morsels this is what we came up with.
Separated the big leaves from the ‘hearts’ and oh boy what an excitement after a few months of California cardboard. Its salad season! Let it begin…
What you will need:
Spinach
Sliced cabbage
Caramelized onions
Shredded carrot
The best goat cheese you can afford or make yourself
Simple dressing- Garlic tonic:
Equal parts honey and apple cider vinegar infused with lots of garlic
Can also include ginger and/or a hot pepper or two, but depending on how much garlic you add it will be hot enough.
