      Saving seed from beets can be quite easy even on the small scale. Beets are marginal here over winter so we dig them up and hold them in crates overwinter. If seeded later in the season they should be able to make it through the winter if the roots are a bit smaller. With that said we fit 20 of the best roots per crate. If you keep at least two crates (one in the back yard the other at a friends or community garden) you will build resilience staving off any inbreeding depression by allowing the two populations to periodically cross and then reselecting (recurrent selection) the subsequent generation’s progeny dividing them into two isolated populations.
